The almond

Sweet almond, Prunus Amygdalus Dulcis is a variety of nut with a fairly hard shell, depending on varieties, enclosing one or two white kernels.
A good quality almond weighs 10 g.

Dietetics Characteristics
The fat matter is made up of 86% unsaturated acids. An excellent source of magnesium and potassium, a good source of phosphorus, riboflavin, copper, niacin and zinc; also contains folic acid, iron, calcium and thiamine.
Origins
Ferragnès and Ferraduel : French almonds, fairly soft shell, light in colour with a sweet taste.
Nonpareil : the most marketed foreign variety of Californian origin.
Marcona : Spanish, slight bitter taste, light in fat.
Avola : Italian, highly renowned, used for making sugared almonds.
Valencia : all other categories.
