The Pecan nut

The pecan nut tree belongs to the Juglandaceae family. Over 500 varieties are cultivated to this day but only five represent 75% of the market: Stuart, Western-Schley, Desirable, Native and Junior Mammoth. Certain varieties produce throughout the year, others are seasonal (the harvesting then takes place in the autumn).
