The prune

The D’Ente plum harvest traditionally takes place between mid August and mid September. Once harvested, the fresh plums are washed, calibrated and dried. It is at the end of this process that the plum becomes a prune. In France, there is an IGP (Indication Géographique Protégée) on the Agen Basin prunes: “Pruneaux d’Agen”.
