The raisin

Most (Vitis spp.) raisins are sun or mechanically dried, directly in the vineyard between the rows of vines. Depending on the temperature this can take up to 2 to 4 weeks. The colour of the fruit changes from green to dark brown and the humidity content drops from 75% to less than 16%.

Dietetics Characteristics

Excellent source of potassium, iron and copper, they hold up to two to three times the amounts of B group vitamins (necessary for a good carbohydrate metabolism) than fresh grapes.

The more common varieties :

Malaga

Large grape with a good aroma, nice Muscat flavour and few seeds.

Sultana

Seedless with a mild and sweet flavour.

Thompson

Seedless, golden and treated with sulphites before being dried to stop them from going brown and to preserve their pale colour, which changes from green to yellow or amber...

Currant or Zante raisins

Miniature black seedless raisins, much sought-after by confectioners.

Smyrne

Medium sized, light brown and very soft.
